Decadent Banana Nut Cheesecake: A Twist on the Classic

Ingredients:

For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
For the filling:
3 ripe bananas, mashed
24 oz cream cheese, softened
1 cup sugar
3 eggs
1 teaspoon vanilla extract
1/2 cup chopped walnuts
For the topping:
1/2 cup sour cream
2 tablespoons sugar
1/2 teaspoon vanilla extract
Additional chopped walnuts for garnish
Directions:

Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press into the bottom of a 9-inch springform pan.
In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in mashed bananas and vanilla extract.
Stir in 1/2 cup chopped walnuts. Pour filling over the crust.
Bake for 55-60 minutes, or until set. Remove from oven and cool for 10 minutes.
Combine sour cream, 2 tablespoons sugar, and 1/2 teaspoon vanilla extract. Spread over the top of the cheesecake. Garnish with additional chopped walnuts.
Chill for at least 4 hours before serving.
