Ingredients:
2 packs of graham crackers
2 cups heavy cream
2 cups powdered sugar
2 cups lemon pudding mix
4 cups milk
1 cup whipped topping
Zest of 2 lemons
Directions:
In a large bowl, combine lemon pudding mix and milk. Whisk until thickened, then let it sit for 5 minutes.
In a separate bowl, beat heavy cream and powdered sugar until stiff peaks form. Fold in the whipped topping and lemon zest.
In a 9×13 inch baking dish, arrange a single layer of graham crackers at the bottom.
Spread half of the lemon pudding mixture over the graham crackers, followed by half of the whipped cream mixture.
Add another layer of graham crackers, then the remaining pudding mixture, and top with the remaining whipped cream mixture.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
Before serving, sprinkle additional lemon zest on top for garnish.
