Pecan Pie Balls

Ingredients:

  • 1 ½ cups finely chopped pecans (toasted for extra flavor)
  • ¾ cup graham cracker crumbs
  • 1 cup brown sugar (packed)
  • ¼ tsp salt
  • 2 tbsp maple syrup or corn syrup
  • 2 tbsp milk or heavy cream
  • 1 tsp vanilla extract
  • 1–2 tbsp melted butter, as needed
  • Optional: ½ tsp cinnamon or a pinch of nutmeg

🍫 For Dipping (Optional but heavenly):

  • 10 oz melting chocolate or chocolate chips (semi-sweet or milk)
  • 1 tsp coconut oil or vegetable oil (for smoother coating)
  • Extra chopped pecans or sea salt for garnish

👩‍🍳 Instructions:

1. Toast the Pecans (Optional but Recommended)

  • Add pecans to a dry skillet over medium heat and toast for 4–5 minutes until fragrant. Let cool.

2. Make the Filling

  • In a bowl, mix together:
    • Chopped pecans
    • Graham cracker crumbs
    • Brown sugar
    • Salt and spices (if using)
  • Stir in:
    • Maple or corn syrup
    • Milk
    • Vanilla
    • Add melted butter a bit at a time until mixture holds together when pressed.

3. Form the Balls

  • Scoop and roll into 1-inch balls using your hands or a cookie scoop.
  • Place on a parchment-lined baking sheet.
  • Chill in the fridge for at least 1 hour to firm up.

4. Dip in Chocolate (Optional)

  • Melt chocolate and oil together until smooth.
  • Dip each ball in chocolate, let excess drip off, and place back on the tray.
  • Garnish with chopped pecans or a sprinkle of sea salt.

5. Chill Again

  • Let set in the fridge or freezer for 15–30 minutes until the chocolate is firm.

📝 Storage:

  • Store in an airtight container:
    • Fridge: up to 2 weeks
    • Freezer: up to 3 months
