Ingredients:
For the Filling:
- 5–6 ripe bananas, sliced (not mushy, just ripe)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tbsp all-purpose flour (for thickening)
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg (optional)
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 cup heavy cream or whole milk
- Juice of 1/2 lemon (keeps bananas from browning & adds a bright note)
For the Cobbler Topping:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/3 cup melted butter
- 1 tsp vanilla extract
🔥 Instructions:
- Preheat oven to 350°F (175°C). Lightly butter or grease a 9×9-inch baking dish (or something similar).
- Make banana filling:
In a large bowl, gently mix sliced bananas with sugar, brown sugar, flour, cinnamon, nutmeg, melted butter, vanilla, cream, and lemon juice. Pour the mixture into the baking dish. - Make the topping:
In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add milk, melted butter, and vanilla. Stir until just combined (batter will be thick but pourable). - Assemble:
Spoon or pour the topping over the banana mixture. Don’t worry if some banana filling peeks through — that’s part of the charm! - Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
- Cool slightly before serving. Best warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
💡 Tips:
- Want extra decadence? Add a handful of vanilla wafers or crushed graham crackers in the filling or on top before baking.
- Add a splash of rum or bourbon to the banana mix for a grown-up twist.
