Southern Banana Cobbler

Ingredients:

For the Filling:

  • 5–6 ripe bananas, sliced (not mushy, just ripe)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tbsp all-purpose flour (for thickening)
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream or whole milk
  • Juice of 1/2 lemon (keeps bananas from browning & adds a bright note)

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 tsp vanilla extract

🔥 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly butter or grease a 9×9-inch baking dish (or something similar).
  2. Make banana filling:
In a large bowl, gently mix sliced bananas with sugar, brown sugar, flour, cinnamon, nutmeg, melted butter, vanilla, cream, and lemon juice. Pour the mixture into the baking dish.
  3. Make the topping:
In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add milk, melted butter, and vanilla. Stir until just combined (batter will be thick but pourable).
  4. Assemble:
Spoon or pour the topping over the banana mixture. Don’t worry if some banana filling peeks through — that’s part of the charm!
  5. Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
  6. Cool slightly before serving. Best warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.

💡 Tips:

  • Want extra decadence? Add a handful of vanilla wafers or crushed graham crackers in the filling or on top before baking.
  • Add a splash of rum or bourbon to the banana mix for a grown-up twist.
