White Chocolate Strawberry Cupcakes

Luscious White Chocolate & Fresh Strawberry Cupcakes

Ingredients:

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup whole milk
1/2 cup white chocolate chips, melted
1 cup fresh strawberries, finely chopped
For the frosting:

1 cup unsalted butter, room temperature
3 1/2 cups powdered sugar
1/2 cup white chocolate, melted and cooled
1 teaspoon vanilla extract
2 tablespoons heavy cream
Additional strawberries for garnish
Directions:

Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a bowl, whisk together flour, baking powder, and salt.
In a separate bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract.
Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Stir in melted white chocolate and chopped strawberries.
Divide the batter evenly among the prepared cupcake liners and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
For the frosting, beat butter until creamy. Gradually add powdered sugar, then mix in the melted white chocolate, vanilla, and heavy cream until smooth.
Once cupcakes are cooled, frost them with the white chocolate frosting and garnish with fresh strawberries.
